Updated the lubridates:: function adding locale = en_GB , asking to choose English

Hi @vagudets ,

I've edited the plot_skill_metrics.R code, just adding "locale ="en_GB"" to the lubridate function. I had an issue before becase my R was in Spanish and the function was trying to read the names of the months in English.
