Hi @vtorralba,

In this MR I include the fixes for the issues you mentioned in #193 (closed) regarding the NA values, plus improvements in the plots that Paloma requested for her workflow.

Note that in the subseasonal bigpredidata workflow, the sfcWind script fails when regridding to the system (for the EU region). This happens also in the operational and it is due to a problem in the data because this variable was downloaded with a slightly different grid than the rest (see: https://earth.bsc.es/gitlab/es/requests/-/issues/2766#note_380215).

We can discuss possible ways to fix this if you'd like.
